The red velvet cake that I bake, however, is only one of many desserts that I do. To keep this recipe simple, I use almond-flour cake mix, red velvet cake mix, and chocolate buttercream. The cake itself is made with a basic almond flour recipe and a slightly modified version of red velvet cake mix. Red velvet cake mix is the only ingredient I use in the original recipe, but if you substitute different flavors, you can adjust the recipe a bit.
While I definitely make my own almond-flour and red velvet cake mix, I also occasionally use the almond-flour and chocolate buttercream that comes with the cake mix. Since I like to use chocolate, I add a few drops of almond extract to the mix, and I also skip the buttercream and add whipped cream instead. It really just depends on my taste.
I don’t know exactly why, but I like to use almond extract in my recipes. Maybe it helps with the taste of the chocolate, or maybe it helps the cake hold together a little better. Either way, it’s a good thing to always have around.
The more I use almond extract in my baking, the better my cakes taste. I don’t know if it is because it is a healthy substitute for butter (which I use in my cooking as well), or if it is because almond extract has a slightly higher melting point than butter.
